Chorizo is an excellent spicy sausage and fairly easy to do.

Just make 30lbs of snack sticks last night. Besides the normal salt, pepper, garlic and red pepper flakes I added about 6 table spoons of fresh chile pequins. I tok them and put them in a fod chopper and added 16oz of water to make a liquid.
