A great way to dress up an already fully cooked boring spiral cut ham. Its sweet with a very mild kick unless you have some hot jalapenos.
Ingredients are enough for two 7-10lb hams:
24 ounces of blackberries (frozen work too)
1 cup brown sugar
1/2 cup honey
2 cups water
3/4 cup orange juice
2 tbsp minced fresh garlic
3 or 4 tsp orange zest
2 10-12lb spiral cut smoked hams
blacken jalapenos over fire or broil in the oven
remove skin and seeds then chop/dice
Combine jalapeno peppers and water in blender and puree
Put that mixture, blackberries, water, brown sugar, honey, orange juice, garlic, and orange zest in a saucepan over medium heat
Simmer for 10 minutes
Reduce heat to low and continue simmering until glaze has reduced in size and is thickened - about 10 minutes more.
Allow the glaze to cool then pour mixture back into blender and puree until smooth or mash the glaze with a potato masher until blackberries are broken down.
Put hams in a 200 degree cooker with hickory and cherry wood smoke (I like hickory and cherry for this but use what you want)
Ladle glaze over hams every 20 minutes until the ham is reheated to your liking. The smoke process should only take two hours or so. Low heat and smoke.
