Vegetable Casserole
1 can French style green beans
2 cans shoe peg corn
1 can sliced water chestnuts
1 cup sour cream
1/2 cup celery
1/2 cup green pepper
1/2 cup green onion
1 cup cheddar
1 can cream celery soup
Cheese it's
Butter
Mix all and place in buttered baking dish. Bake at 350 until bubbly then cover with crushed Cheese it's and a stick of melted butter poured on cheese it's for 15 more. I double it for my family. Thank me later.

Peel and cube two pounds of sweet potatoes, coat with olive oil, season with salt and cayenne pepper. Bake uncovered at 350 for 30 minutes. Whisk together a half cup of lemon juice and maple syrup. Pour over potatoes and bake another 30 minutes.

Can be done ahead of time and reheated in the microwave. Great leftovers.
