Took out a sow weekend before last from my place finally instead of the large boars we had been taking. Finished processing her day before yesterday and put about a pound and half piece of top round in the crock pot with nothing but Garlic salt and fresh ground pepper and some water to keep it from sticking. Cooked it on low for like 12 hrs or so. Was some of the finest and most tender meat I've had in a long time. Didn't even taste like pork. Tasted like roast beef. This sow had a ton of fat on her so I decided to make brats from the trimmings. Can't wait to grill some of these!

cheers Yes Sir! Next time yall kill a big boar make chorizo with it. My favorite is the La India mix, just follow directions on the jug. up Normally make a few hundred lbs a year of it and always run out.

I made some Italian, Brats and Chorizo from the boars we have killed. For some reason I can't tolerate the smell it gives off from the boars. Although the chorizo is gone. My son has take all the sausage I've made and for some reason it doesn't bother him or his wife so at least it didn't all go to the dogs.

Juicy and very good. Not soft as store purchased but delicious non the less.
