looking to order new boning knife for processing deer, pigs, nilgai. What do yal use, 5 or 6 blade" ? I use a small filet knife, I think 4 to remove sinew and fat but want something a little heavy for deboning.

Most cutters I know use a 5, but I like the 6" flex. Best advice I could give is choose one and stick with it. Bouncing back and forth could get you cut, or poked. IMO
