Use a sweet rub and low and slow it. Don’t over cook it.

I've done several. Brine them and stand them on the pulley breast area for smoking. The drippings come from the backbone area to the breast. I've also completely boned them, brined them, and smoked them breast side down.

I just two turkey breast. I brined them for 24 hours, wrapped in bacon and smoked at 225 until it reached appropriate internal temp. I believe the brine was 4 cups apple cider vinegar, 1/2 cup kosher salt, 1/2 cup brown sugar, 1 bay leaf and 20 peppercorns. I boiled this brine then mixed with 6 cup of ice. The brine and ice should make almost a gallon of brine. It was awesome.

mix butter and poultry seasoning .rub under the skin . Rub oil on outer skin and dust with more poultry seasoning. I put the whole turkey in a foil pan, and add 2 cups of chicken broth to pan. Cover with foil once the turkey has smoked half the cooking time (after 6ish hours). Oh and Use pecan wood.
How I've done it the last 4 Thanksgivings. All 40 of my family members have said its the best turkey they have ever had.
