Any venison that needs to be "tenderized" needs to be ground for burger or sausage or long and slow in a crockpot.

I recently discovered this tool called a Jaccard. It works extremely well. I will take a tough venison steak, sprinkle on some meat tenderizer, and give it a once over with this Jaccard. In a few minutes, it's a tender cut of meat.

Cold dry aged. My deer get deboned and wiped dry. The dry meat is placed in Ziploc bags and into a cold fridge for two weeks. Then it's rinsed with cold water, dried, vacuum packed and put in the freezer. Always tender.
