Excellent Travis. We harvest a couple a year and clients love the meat.
Good luck

Ain't worth cooking. Send meat COD to PO box 374 mountain home TX and I will dispose of it properly.
True story: had Nuge out to the ranch for a hunt and bought some 2" thick butcher shop prime ribeyes He shot an old pere David bull and all we saved for us was the tender loins (he donates most of his meat, that year he was sending pallets of jerky to the troops).
We cooked those TL's on the same fire as the ribeyes. The steaks were awesome but those tenders were incredible. They were huge also and we didn't finish them. A couple of guys digging thru the fridge a few days later found the leftover PD and ate it. Called me immediately and wanted to know what meat that was because even leftover it was the best they'd ever had.
The reason PD's almost went extinct is because they're the dumbest deer in the most populated country and they're the best tasting meat on the planet.

I have not tried PD but Eland in Africa was the best Wild Game ive eaten I believe Rancher raises both. I got rid of my elands. Too hard on fences. Ask me when I'm eating eland and they're the best. And when I'm eating pere David they're the best. I have to say though that those tenders were the best I've ever eaten.
