Help me stuff this potato. They come too big foe me to eat the whole thing. I have stuffing enough for two but only one potato skin. Decisions, decisions. Would you reuse the potato skin, or use the leftover stuffing in a Pyrex bowl.

I use red potatoes and mix butter, sour cream, mexi cheese, bacon bits, sea salt and pepper and stuff that mixture in mini loaf pans. Easier than trying to hollow out skins without tearing them up.
Sometimes I add chopped onions and/ or fresh Jalapeņos into the mix.

The potato came out fine. Here you go. I wonder what the poor folks are having for dinner tonight?




I hate to show this picture, but I have to tell you. I'll get two more meals from the eight ounce tenderloin. I think I could live on food stamps alone. They once had this TV food guy called The Fugal Gourmet. He wasn't.

I stopped at the HEB deli today. They called them twice baked potatoes and charged two dollars for them. I made mine from leftovers. I have one frozen for Sunday dinner.
