I'm gonna grill some redfish on the half shell this weekend, I'm looking for seasoning ideas that doesn't involve the name Tony in a seasoning.

Sliced onions and lemon to lay on the top. Season with SPG. Butter pats on the onion slices. Garnish with chopped green onions when serving.

Little bit of lemon pepper, little bit of cayenne pepper, garlic, butter and salt to taste. 1 sliced jalapeno and a few "onion rings"(about 1 slice worth) per fillet. Spread onion rings across fillet and put jap slices inside the onion rings.
Serve with a mango/pineapple chili salsa, dirty rice, a green of your choice, and roasted red potatoes with garlic and rosemary.

I've done several. I simply spray them with Pam, and use chili powder on the meat side for color.
My seasoning comes from seasoned butter which is what I use for a dip. I use lemon juice , Tabasco, and garlic powder in my seasoned butter.

Light salt, black pepper and cayenne pepper. Then brushed with melted butter with a little bit of balsamic vinegar mixed in. Layer top with thin onion and lemon slices. Lots of Hickory smoke.
Oh MAN! I'm heading to the freezer to pull a few half shell filets for tomorrow.

You grill a half shell red. Hot and fast. Doesn't take long, don't overcook it.

I cook them on a Weber Kettle. High indirect heat (coals piled on one side and fish on the other). Cook until you see a just a bit of separation of the meat from the skin when you push down on the skin around the edge of the filet with the tip of a spatula - usually five minutes or so.

On the top rack, hot until you see it split down a couple of obvious places.
You need to sprinkle the top of any grilled fish with paprika for color. They do not brown well on the top. I use chili powder farther than paprika.

Take fish and season with uncle chris' steak seasoning and lemon pepper. Place fillets meat side down on hot grill for 2 minutes. Flip back on shell and place slices of lemon and onion on top. Grill another 5 minutes. That's it!

Have done some of the ways stated above, haven't really tried one yet I didn't like. A different one we tried season with salt pepper and garlic powder lemmon juice and some tomato paste top with sliced onion. Different but very good.

Only fish my wife truly enjoyed was A RF on the half shell I did on the grill. (I stress 'A' b/c I've only caught one keeper red in the 13 years we've been together, SMH)
Method I followed:
One beer (I like Shiner), couple tablespoons melted butter, salt, black pepper, garlic and onion powders, and paprika. Heat on stove a few minutes to marry and concentrate flavors. Baste fish every couple minutes until cooked.

I send you guys to school and buy you books. You chew the cover off them. The flavor comes in drawn butter. I use Tabasco, garlic powder, and lemon juice in there. Also you really, really do need paprika on any grilled or baked for color.
