its been awhile since ive had a favorite most have to much vinegar to them but i'm on the prowl for some again. What yall got?

Best store bought I have had was and HEB store brand came in the rolls like the breakfast sausage etc. To my knowledge they no longer make it crying

Do you use a particular seasoning mix or make your own seasoning? I've been looking at ordering some of the AC Legg Chorizo seasoning.

I've tried a variety of different brands of Chorizo from our local HEB, I prefer the Andy Garcia or the Cacique pork ... works great if you have a left over baked potato, chopped up into small cubes, toss Chorizo into skillet and as it starts to make it's own liquid, toss in the potatoes ... cook until chorizo is done ... hard to beat

I use my own. Here is a good recipe. I start with ground pork from walmart.

I make my own using "La India" Chorizo seasoning. Normally make a few hundred lbs a year. Best I've ever had and all I use. I use strictly feral pork (big boars are great for this). I like my chorizo as lean as possible without being too dry. If I need fat I add smoked bacon ends & pieces (cold smoked in my smokehouse). Everybody likes it. If you follow the directions though it does have a nice vinegar bite, which I like but may not be for you.
