Been slammed at work, finally getting around to posting. This was my first cook in a while since wood is hard to come by up here. It took several months to find someone who would bring me a cord of oak for under $400 but I finally found some for $300 delivered. Got most of the meat at Costco and ended up cooking 2 briskets, 3 butts and 6 racks of ribs. Salt & Pepper only... Salt, pepper, garlic, onion, paprika, chile powder... Same spices as ribs, different ratios... Gotta have a cold one...or ten. Only pic I had was a snapchat I sent to some buddies, before I wrapped the ribs Lookin good, but don't look too much... Only been on for about 5.5 hrs, just starting to darken. They got 9 hrs of smoke and then wrapped in butcher paper for a few more hrs, then rested for several hours in the cooler. That'll do..

Brisket all portioned and vac sealed. Made some brisket and egg tacos for breakfast the other day, just put a vac pouch of brisket in some boiling water for a few minutes and it was perfect! I saved the last small pieces of point to use in chili or beans or anything else.
