Boil the meat for three hours and do any of the above.

Golfballs...

Season the meat with SPG
Chill it and make golf balls
Wrap w bacon, pin w toothpick, trim excess
Rotate golfball and cross wrap it again, pin and trim.
Smoke it at 200 for a couple hours
Got a Thermapen? Pull it at 160

Now, the meat is near done but bacon is sloppy...
Preheat oven to 400 degrees.

Here you can use your imagination...

Dip them in...

Sweet honey and whiskey glaze
BBQ sauce and whiskey glaze
Just drink the whiskey
Sprinkle with Tman rub
Juggle them in the back yard for a fresh air marinade

Cover mama's shallow baking sheet w foil, line em up but no touching and pop in hot oven for a few minutes and peek at them. Keep at it until you crisp up the sloppy bacon and than let us know just how good you did.

Everyone I know browns it to separate it then simmers it before making everything except meatloaf and meatballs. How do you make your spaghetti sauce?

By not boiling the meat.

I haven't tried this but. Can you fry it up with jalapenos and onions. Throw it on some tortillas with hot sauce and cilantro?

Some places grind chili meat and it comes out like 1/4 or 1/2 inch cubes.

I would sear it in a hot cast iron pan/dutch oven add garlic onion bell pepper salt pepper cumin and some paprika and cover with water simmer covered till tender and water reduces add some flower/cornstarch to thicken and make a gravy and you have carne guisada.

Could also season/regrind it and make breakfast, link, or summer sausage.
