I have a santoku style chef knife, handmade in my shop. This knife is 11 3/4 overall length, with a 7" blade that is 2" wide at the widest point. The blade is flat ground on 3/32" 154CM stainless steel with a 400 grit hand finish and a tapered tang. The handle is oil finished cocobolo. My heat treat, with cryo, to 60RC. Price is $300.
