I was just wondering some tricks or techniques y'all might use to get that fall off the bone rib. I've made some really good batches in a new electric smoker but yet to perfect the fall off the bone perfection. I've done some different stuff and some turn out better than others but would like some input. Thanks!! Trying again this weekend so thanks in advance.

some people like the fall off the bone texture but I personally don't. However, that just takes time and patience. Cook it longer and it will fall off the bone. You could wrap them in foil for the last few hours to keep them from drying out and even add a little moisture like apple juice. Take them out of the foil for the last 30-60 min to crisp up the bark if you like.

baby backs - 2/2/1; spares or st louis 3/2/1
in either scenario the ribs are unwrapped for 2 or 3 hours, wrapped in foil for 2 hours and then unwrapped for 1 hour
225-240 degrees cooking temp

Meat side up for a couple hours, stick in foil meat side down for a couple hours, pull out of foil and go meat side up for the last couple hours while putting a glaze on them once every 30-45 minutes. I use some of the fluid from the foil in my glaze.

I had some at a Memorial Day picnic that were too tough, yet I don't like for them to fall off the bone.

I've always heard fall off the bone is over cooked I tend to agree but that's how my wife likes them (not me). I use the 3-2-1 (meat up unwrapped, wrapped, aluminum foil opened back up to stiffen up the bark but still cooking in the juices) method running around 200 degrees ... my wife prefers I pull them after the 2 hours wrapped and place in a crock pot for the last cycle and it falls apart. I prefer tender but still attached to the bone slightly (3-2-1)

225 for about 5 hours for SLC ribs, include some type of water to help with the moisture. I add a rub about an hour before I put them on the weber. Temp of the ribs needs to be about 180. Only a little bit of wood as well.
I'll take a Black Female every time.

Keep the temp below 200 to preserve the moisture. Don't wrap until done, then use clear kitchen wrap. Pull them at 185 to 190 and let them rest, then wrap.

I do my baby backs 5 hours at 225. 3 hours unwrapped, last 2 wrapped. Might open up the foil for the last 30 minutes or so.
I season the night before, put my secret sauce on them at the 2nd and 3rd hour. At the 3rd hour, I wrap in foil. I don't open the foil to sauce anymore. They come out perfect for me. They cling to the bone just enough to be able to eat them like ribs. You better have a sharp knife when cutting them or the meat will pull right off the bones.

One tip to keep the rib ends from overcooking is to cover them while on the smoker.
