I've made croquettes. Fish, bread or cracker crumbs , and an egg. It's better to let them set up, but you can pack them and put them in medium hot oil. Put a chopped onion in there

....or salmon patties like above. My brother and I ate them as fast as our mom could make. Tried it myself once it was a disaster. Get details from Bill above.
