Looking for input on how a waterbuck cow would taste?

All of the old Africa stuff I have read say they aren't great. I have not tried any myself.

"...The meat of older waterbuck takes on an unpleasant odor from the waterproofing secretions of its sweat glands, prompting predators to choose other prey."

I had water buck in Africa. It was quite good and was one of the cooks favorite meats. The Guide said it's all how you skin it.

Like has already been said ,all in how you skin the animal . Eaten it in Africa several times and it is very good. Forrest
