I debated on posting this because it is too simple but something that I over looked. We stole this 'recipe' from Plated but use it all the time now. I know these aren't actual pickles because you don't give them time to ferment but these are delicious and easily tweaked to your flavor. I make these up as the first part of dinner and by the time the burgers come off the grill they are ready to eat. You need to use seedless cucumbers either English or the Persian version will do.

One Persian cucumber
1/4 cup red wine vinegar
1/4 teaspoon salt

Mix all together and let set for 10-20 min. They keep for up to a week. We add a little fresh dill, a couple of garlic gloves, and sliced shallots to the mix but they aren't necessary.

Can do something similar with green beans and a couple other varieties we always called it three bean salad and cucumber salad.

yep, my dad used to make similar fresh from the garden ... cucumbers, sliced onion and minced garlic ...

I make it up when my cucumbers come in each spring. I call it marinated salad.

Vidalia onions are early this year and would be a great addition.

I make it similar to Bill's version but I make it Bread and Butter flavor by adding sugar to the vinegar.
