Stub, chili for me is both art and science...



I have a more up to date chili model if you want to see it . I got shake bottles marked in 10nths I can do a mix quickly with eyeball, like Franklin does with salt and pepper. Most of the time I do chili I do beef enchiladas. I also add flour, or corn meal, but these are my main ingredients, and I try different percents.. I conducted a taste test with my kids, with tomato sauce and without. My daughter liked with, my son without. But my daughter loves spaghetti and my son loves tex-mex. grin

I have read on the internet that a key to making great chili is making your own chili powder. I think this is probably true, not sure I want to mess with making my own (at least not now, so subject to change grin), but I am looking to buying some higher quality chili powder.

Ok, so I already changed my mine. grin My next batch of chili mix I'm using fresh ground chilies, I got a blender why not. Just remove stems and most of the seeds, throw in a blender.

Okay it was good and easy to make but not real chili, chili. Next time (soon) I will do a traditional Texas type recipe up

Costco in my area just stared selling Chili at their food court, it is outstanding and you get a large amount for $3.99

the 19th bomb squadron at carswell had a snack shop that make chili nachos. rico's cheese first, then chili, then onions and jalapenos. delish!

I do the same with ranch style beans or bush chili beans. I mash them up, and dab on each chip in place of wolf brand chili.

Only idiots who think they are some kind of special southerner because they are in texas think chili cant have beans in it.

By the way I thought that it was decided on here before you cant use ground meat to make chili either.

first off, I'll eat chili either, with or without beans ... but to me, chili is meat & spices ... then there is chili with beans which is just that, chili with beans ... but "chili" has no beans ... sounds simple in my head but not coming out in text form explaining it properly ...

maybe ... there is "chili" and there is "chili with beans" ... although similar, not the same thing.

I am pretty sure you are not allowed to put beans in chili at a competition or you will be disqualified.

as for using ground meat ... what is a chili plate used for on a meat grinder if not for chili? My mom used ground venison and then cubed up beef (like stew meat you can buy in the store) as the basis of her chili ... my wife uses similar but uses cubed up smoked brisket in place of the cubed raw meat (which gives a nice smokiness of flavor)

This reminds me of my childhood at my great grandmothers house. She made a great German potato salad, but there was always two bowls one with onion and one without for those who didn't like raw onion. They were both potato salad, you didn't call the other a bowl of potatoes with mayonnaise because there were no onions in it.

In competition your beans are not allowed to have anything larger than a bean in it... does that mean a pot of beans with a hunk of hamhock or bacon or salt pork or brisket or sausage, or jalapeno or onion etc. isn't a pot of beans? of course not, lets leave foolish notions behind and enjoy good food.
