Are there any left? An old man i knew when i was kid told to always take my knew knifes and hand saws to get a propper edge and sharpening. There used to be one in the mall in town(south Houston) that would properly sharpen your knifes. I had a buddy that could do a real fine job but, he moved away. A Cabellas opened up in town i noticed free knife sharpening on their sign and since i just bought 2 new pocket knifes and not having been in cabellas before, i figured i would have them put a good edge on em. A manager guy walked up, asked how he could help so i told him what i needed,a knife sharpening and a hog squeel call, he looked at me kinda funny but, he led me to a table that had a bunch of sharpeners on it to try and asked for my knife, I quickly realized it was free for ME to sharpen my knife. I handed him my OLD beat up knife to play with, not wanting to be rude since he offered but, not my new blades. I couldn't find a call like what i wanted, i walked out empty handed and disappointed. I'll put my own edge on em before let someone who might not know or care do it

There are a few sharpeners around. There's a guy in Bastrop named Grizz at To the Point Knife Sharpening. There's a shop in Austin. Most of the Texas Knifemakers' Guild guys are capable sharpeners, but you'd have to ask them individually.

I had a guy at Canton Trade Days sharpen a Randall for me. He had what looked like a pretty good setup to me..so I assumed he was experienced. Afterward I had to go home and put a proper edge on it myself. I think a lot of those knife sharpening guys just set up to make some money and don't necessarily know what they are doing..but then maybe I am just a little picky. I tried a Worksharp myself and wasn't very happy with it. I probably don't know what I'm talking about, but it seemed to me to put more of a round edge on a blade, instead of the proper bevel. Once I used it on a knife, I would have to do a lot of work on a blade to sharpen it again with anything else trying to get a proper bevel on it again.

Most I have seen use belt sanders and grinders. I have gathered up some store boughts and taken them to them to save time, but using a worksharp or otherwise machine sanding/grinding a fine custom blade is pretty much heresy IMO.
I learned long ago you can't reason someone out of something they don't reason themselves into.

Knife makers use the same type of belt grinders to sharpen their custom knives. They do not hand sharpen with stones. So they are all committing heresy with their knives before you buy them, lol.
If your not satisfied with a worksharp you simply don't know how to use it. I can sharpen my custom knives with it in about 2 minutes. I can skin multiple animals without losing the edge.

Agree with those that use work sharp tools. I have the Ken Onion and the guided field sharpener. Both work well and I also have numerous other tools that I still use on some knives. http://www.worksharptools.com/how-to-videos/
