I'm making shrimp scampi tonight. I have a pound of frozen shelled and devained shrimp. They have the tails on. I just looked at a couple of recipes. They all call for parsley. I promise you that cilantro is better. They all show serving the dish with the tails on. I've taken them off in the past. What do you do when serving any shrimp dish?

Cooking some shrimp for supper here too. I almost always remove the tails. Only a few dishes I leave them on for. They're just for looks.

The tails and the shells have flavor that will cook into the dish. I like it with the tails, and shells too. Not everyone likes more shrimp flavor though. So I guess my answer would be, it depends.

I only leave the tails on for fried or boiled. Everything else, especially in a dish like scampi, tails off.

I will never take the tails off unless it's going in a gumbo.

Sometimes I'll throw em on the grill with the shells on (always with the tails on) if I don't feel like cleaning em all.

Only downside is the vein/intestines are still in em then.

Leave them on for fried shrimp and that's it.
I'll eat some fried tail.

I dislike it when the tails aren't taken off, I don't understand it, you worked to get everything else off of them. Plus then if they are rolling in a nice sauce the tails take away some of that sauce, it's not like you can suck the tails to get the sauce off...unless I am missing something here.

Gulf Brown's and Gulf Whites taste about the same to me. I buy Gulf Whites by the sack off the boats and I think they actually have more shrimp flavor than the brown's. JMO. I boiled some brown's last night and they were mighty fine though. Bay shrimp (brown's & white's) are dang good too. IMO all wild caught shrimp are good. Farm raised and imported shrimp are garbage.

I'm so jealous skinnerback, I love the saltwater and the Texas Coast. Spent a bunch of summers in Fulton as a kid. Remember eating stuffed flounder at an old beat-up place called Yacht Haven. probably in the 60's

I bet those shrimps were GREAT !!!!!
