I have some center cut pork chops(pork loin cut into slices). I wanna switch it up a little bit. Normally I brine them and then cook on the grill.
Any other ideas to switch things up?
I avoid Dick's and hope they fold.

Season and cook on a cast iron skillet in butter/olive oil.

Roll in flour, brown each side in buttered pan, take out make a gravy, put the pork chops back in and let simmer until cooked thoroughly.

Blackened pork chops. Marinate them for at least 30-60 min in a little mixture of Dale's (easy on the Dale's or will be too salty) & Worcestershire. Remove from marinade, sprinkle with blackened seasoning of choice, drop in hot cast iron skillet with some real butter and don't overcook. Dare good. Serve with rice pilaf & buttered squash or whatever veggies you like. Or, make smothered pork chops. Season meat/dredge in flour/fry until crust is golden/remove and place on paper towels for a minute, then place pork chops in a casserole dish/make a brown gravy & pour over chops/cover with foil and cook in oven @ 250-275 until they are fork tender. Serve with garlic mashed taters and corn on the cob. Or just season/batter and fry them (my favorite). Set me down with a pile of well seasoned fried pork chops and a bottle of hot sauce and I will hurt myself. Or if wanna still use the grill make jerk pork chops. Marinate in the jerk sauce and grill whole, or cut into pieces/marinate & make pork ka-bobs.

hate to suggest for center cut chops ... but my wife makes a dish out of regular bone in pork chops that is excellent! lightly season pork chops and roll in flour. drop in skillet over medium/high heat with enough oil to cover bottom, lightly brown both sides to sear in juices of the pork chops and remove to a paper towel lined plate. take a glass (or corning ware) dish, lightly oil (spray) and place browned pork chops in the bottom. thinly slice white or red potatoes and about 1/2 of an onion and place on top of the pork chops. mix up 1 can of cream of mushroom and 1 can of cream of chicken soup along with 1/2 cup milk. Season soup mix with black pepper and salt (to taste). pour soup mix over the potato/pork chops and bake at 350* for 25-30 minutes.

I like to cut my pork loins about an inch thick for smothered chops. Heck of a meal.
