We killed 2 stags this year in Llano, its called hyopgonadism. Game Warden emailed one of our guys a study on it they did several years back.

How old you think that 13 inch spike is? This dude thing was ~3.5yo per the tooth wear. Like Bobo said, they are basically like a fed-up steer. They don't age like a buck. Necks never swell, heads never get blocky. But, their bodies can get much thicker than a doe's and they can pack on the fat.

So does that mean the meat is a little more tender if the pack on the fat more? I have heard of guys who castrate wild hogs and release them to run them again with dogs...and also say the meat is better than any other wild pig once they are caught again.
