If you don't want to vacuum seal, wrap first in Saran Wrap, then freezer paper. Will keep for several years without freezer burn.

I use a vacuum sealer. Although I wrapped up a cow elk I did at home in butcher paper and some in press n seal. Meat was perfectly fine even a year and half later.

I double bag in Ziplock brand FREEZER bags! way faster & cheaper than expensive vac-bags, and proven same performance for me.
(have keep venison/beef/chicken up to 2 years with ZERO freezer burn - fresh as the day I put it in!)

2 layers of freezer bags provides 6 MILS of vapor barrier (eliminates burn)
AND single layer perforation protection ( have had vac bags get cut during storage rotation); hasn't happened once with 2x freezer bags.

FWIW, I used to vac-seal, but one day I 'ran out' of the expensive vac roll in the middle of some processing, so just finished the rest of the meat off with 2x ziploc bags (double-bagged); THAT 'sealed the deal' for me, as the 2x ziploc stuff lasted just as long and fresh as anything I ever 'vac'ed' w/expensive bags. Don't knock it till you try it... roflmao (btw, use only Ziplock brand FREEZER bags (DONT shortcut with walmart/cheap brand, etc.) You can get quantity of Ziplock brand bags cheap at Sams/Costco . . .
