I was able to get a fat cow elk last week, and just picked her up from the processors. The ribs were super meaty so I had them cut up, question is on the best way to cook them? I've smoked tons of pork ribs but never beef of any wild game ribs. Would you just put a good rub on and smoke low using the 3-2-1 method? I'm using the bigger Kamado Joe if that helps. Any advice you can throw my way would be greatly appreciated..

Just be careful because they can dry out really easy. If you have ever done beef ribs do them the same way just keep your eye on them.

Emeril Laggasse has a Blueberry Venison rib recipe I've done before that was fantastic, may work on elk ribs as well.
