I have never, ever really enjoyed eating wild duck. I used to duck hunt a lot, but had an individual who always wanted them. Once I lost track of that gentlemen I basically quit duck hunting because I will not kill something just for sport and let the meat freezer burn.
Well, this weekend I had an opportunity to duck hunt with some old friends. Myself and one of the other guys tried to pass the duck off to one man who likes them. He was ok with it, but insisted I take half and try a recipe he gave me. This recipe completely changed my opinion and may get me back into duck hunting on a regular basis. I wanted to share as I know several of you have probably formed and opinion like i did. Here goes, hope you enjoy.
Ingredients: How ever many filleted duck breast you want. ( use the whole breast on small ducks such as teal) If using mallard or other large duck cut in strips large enough to lay across a cut in half fresh jalapeņo.
1/2 fresh jalapeņo per duck breast or strip 1 slice of bacon per breast or strip fresh pico large avocado shredded mexican cheese fresh tortillas Cajun Seasoning Zing Zang bloody mary mix
Directions:
24-48 hours before serving time-After cleaning your ducks and/or cutting them to the appropriate size rinse with cold water and pat dry with paper towels.
Apply cajun seasoning to both sides liberally and press into meet. ( don't rub, press it in with your fingers.
Submerge in Zing Zang bloody mary mix in zip-lic or some kind of sealed container.
24-48 hours later: remove from zing zang, lay on jalapeņo, wrap with bacon, and secure with toothpicks.
Place on pit and cook at 350 degrees using indirect heat to desired temperature. ( I wouldn't over cook!)
Once done remove toothpicks and slice the jalapeņo,duck and bacon to small pieces.
Warm tortillas place the duck, pepper, bacon, avocado, cheese, pico, and a favorite hot sauce, or picante.
Grab cold beer and enjoy! You can also put some cooked soften onion to add to the flavor and its great as well.
I hope this helps some of you not let your ducks freezer burn, or is another go to recipe for you hard core Quack Heads.

sounds good. We usually do Duck Fajitas. Slice the breast into Fajita strips and season with your favorite Fajita seasoning. Grill at 350 until medium-rare to medium (do not over cook) Add sliced jalapeno, onion and cheese to tortilla with the duck meat. It is great.

Oh, and you got to heat those corn tortillas up in oil to get them soft before you can roll them and tooth pick them.
