Have the legs and thighs from 2 sandhills.

Heard they're a bit more challenging to cook than the breasts.

Anyone have any recommendations?

Bone them out and make chili or gumbo. That's what I do with turkey legs.

I just cooked 2 whole Sandhills cranes.

We did th legs and thighs like BBQ chicken on the grill and they were great. We marinated me for a few hours.

Then on the grill, we turned half of it on and left the other half off. We put the legs and thighs on the off side and let them cook on indirect heat for about an hour. Then we gave them a hard sear and put more sauce on the hot side. They turned out great.
