I made duck poppers for New Years and everyone loved them they ate them so fast I didnt even get a picture and I made over 30 I did make a change to the recipe listed below instead of using red wine vinegar like I normally do I used apple cider vinegar and it made a huge difference and tasted a lot better! I like the idea to brine, I always soak duck in buttermilk for at least 24 hours, not only does that take all the gamey taste out of it, it makes it even more tender and juicy. If you look at the places that make better juicer fried chicken majority of them will soak their birds in buttermilk.
