I've done them from scratch from a sack but I'm taking a shortcut this year. I'm making Texas clavier with peas from a can, cilantro from my garden, and homemade salsa. What are you guys doing with your blackeyed peas this year? Here you go.

Picked up a couple quart bags of fresh frozen black eyeds in Luling last week.
Bring to a boil, skim off scum, add coarse chopped onions, butter, couple slices of bacon, and Kenny's Seasoning. Reduce to simmer and cover for 20-25 minutes. Check for doneness. Drain and re-season, add more butter, and habanero Tabasco. Eat a large bowl with sweet cornbread

Soak them tonight and cook them with a couple of ham hocks, onions, tomato sauce or salsa and garlic until hocks fall apart. Soaking is not necessary. I OD on them and one great thing is no one will bother me whatever room I am in.

I gave all mine from this years garden away, I don't like the taste of dirt. Those that I grew them for rave about them, but I will pass.

I gave all mine from this years garden away, I don't like the taste of dirt. Those that I grew them for rave about them, but I will pass. I wonder if the 'taste like dirt' thing that lots of folks claim is like the asparagus making stinky urine thing? That one is genetic and only affects a small percentage of folks. I love black eyed peas and asparagus. Texas Caviar is a favorite of mine.

Could be, my mom used to make me eat a portion of everything on the table, I hated blackeyed pea day. A few years ago I decided the reason I didn't like them was because they hadn't been cooked right. I made my own batch of them and still didn't like them. I grow them and trade them for peaches, they taste much better that way.

got mine going...going to add smoked jowl and a little onion and black peppercorns to it in a few gonna have them for dinner with ribeyes and baked potatos

I think I got Mama talked into a solo Walmart run to get some fixins for Texas cavier and big old boiling shrimp. I'm the only one north of Houston that can make them the right way. Gotta settle for frozen up here though.

Add 1/4 pound bacon to a cast iron Dutch oven. Cook just short of crispy. Add chopped onion, bell pepper, and celery to the bacon and grease. Cook till translucent. Add a bunch of left over ham, couple jalapeņos, and minced garlic. Stir and brown ham. Add peas and stir in for a couple minutes. Cover contents with chicken stock or water. Salt, pepper, and Tony's to taste. Simmer couple hours. Serve with skillet corn bread and honey. I like to add a little Louisiana hot sauce on the top.

Put cilantro in there and i assure you that they will not taste like dirt.

1 lb BEP"s, 1 pkg salt pork, 1 chopped onion, some chopped cilantro and at least 1 tbsp. Fiesta Fajita seasoning. Soak peas overnight, rinse, put in crock pot with other ingredients (not cilantro yet), cover with water and let them slow cook all day. add salt & pepper or more fiesta fajita seasoning to taste. Add cilantro about an hour before serving.
Haven't had it in years but never spit any out. I am a sucker for happy endings and strapped cowboys.
