All the supposed experts say to drain any grease off the pot. With whitetail and axis there is so little grease I leave it in the pot and simmer the whole lot overnight. Thoughts?

I add ground bacon to my liking. Fat is flavor but not too much. Drain the grease. I do lately because if I don't acid reflux makes me want to stick my head through a wall. Olive oil comes in handy and is good for you, but lacks flavor. It ain't bad though....


use olive oil & don't drain...

I never drain it when using venison. Like you said not enough fat to worry about.

Leaving it in the pot to simmer overnight was the main point for me. The meat needs to break down.

We just skim off the excess grease. Gets rid of some of it but not all. Works well for us.

Meat so "gamey" you can taste it through chili powder, paprika, cumin, garlic, onions, etc, etc. Dang!

Its the point of eating wild meat... I do the same love the taste of venison

beef is at the store and easy to get if yall want a mild flavor
