I always have bags of ice in my cooler before I go out to hunt. How long can you keep a deer on ice before gutting it?

I would not recommend this line of thought. I have my deer quartered and in the cooler ASAP. I think remove the guts and replace with ice, that's only if I'm having someone else cape the deer.

Your trying to cool the body down as quickly as possible leaving the innards inside will just prolong the cooling process and as noted above it takes a matter of 15 minutes to field dress a deer.

Yes, unless you get to it fast and immediately skin/quarter it, it needs to be field dressed. Leaving the guts in will ruin the meat faster than any other single factor.

Dien, go to YouTube and search for field dressing a deer. Also view field dressing a deer without gutting it.

Always, always, always gut you deer immediately after shooting. No ifs, ands, or buts. I don't care if you have a mountain of ice, gut that danged deer and then ice him down.

From the max time between death and gutting is maybe six hours tops. Ice or not.


They make ammo specifically for hunting for a reason! nidea

I am in for gutting a deer right away, but doing it immediately is not that important if it isn't gut shot. After it is shot we will give a deer 30-45 minutes before we go get it. Sometimes if the shot wasn't good we may have to track it down, so an hour or two before gutting.
I have helped guys find deer the next morning after it has laid there all night 12-16 hours in cold weather (I wouldn't recommend this in warm weather). And the meat was fine.
And we have never iced down a deer, they go in a walk-in cooler for a few weeks before processing.
As a matter of fact after we hang and process a deer, customer's claim that our method is the best venison they have ever had. And we are not just deer season guys. We hunt year round and process out over 70 animals a year this way.
I do not know where the panic over getting the deer on ice within minutes came from, but it isn't that important.
Some have even gone with the no-gutting method of quartering a deer. So the insides stay in the animal even longer.

Sig, I went back and edited some for clarity during your post. And you are spot on with no "one size fits all"
But I have known guys to take a cooler of ice in their Ranger as they go out. And rush the gutting and getting an animal on ice before it ever even made it to camp. I just always figured this was over doing it.

Soon as you can, or get the animal to your house, camp or whatever...... then go on ice, if its cool or colder
outside then you can get away hanging it for a bit, i dont, mine goes on ice when we are done.

Also skin the carcass soon as you can! much easier than when it gets cold! Nice to have the luxury of a walkin
cooler to hang, we dont...... would be nice!.....


hunt safe, and pray for cooler hunting wx....... this weekend of 60's, upper 70's is for the birds!

elmer As fast as you can is my rule. I've shot early, gutted, then crawled back in my blind many times and still had deer or hogs come to the feeder. I don't carry ice with me to the blind, but I do carry a can of black pepper. On warm days. I'll pour pepper around the nose, mouth, and usually in the cavity, as this keeps the flies away. up


I Feed Indian Corn. The deer love it and all the colors make them stay at the feeder longer.

If it's cold (30's) I'll often gut 'em and hang 'em in a mesquite tree until I'm ready to stop hunting. When shooting our does, we'll drive around, corning roads then come back around, shoot the does, gut 'em and hang 'em on the spot then come back for them later.

I just prefer to gut them and get them cooling off sooner than later.

Me neither, considering gutting one is a 10 minute chore, 15 if you got no help or beverage holder... at least rough dress them, then go back and get top of esophagus and anus later, but getting the guts out is too quick and easy...

And in thinking about the "not gut shot", how do you really know? I have seen several heart/lung shots that splintered a rib that sliced into the abdomen...

I gut mine ASAP as well, but I like to let it hang for a short few days (depending on temps obviously), to let the meat age. Sort of like aged beef. Deer meat seems the toughest when eating very, very fresh cuts of meat IMO.

True, but one freeze/thaw cycle cures that, and I can't eat it all fresh.

Cut some steaks out of the buck my wife shot this weekend. Kosher salt, course pepper, and garlic, seared in a cast iron skillet with a little butter. They were great and tender. Never frozen not aged.
