Being a bachelor I can cook when and what I want. Only problem is my child support makes me cook on a budget. So I actually enjoy buying those big 10 lbs bags of chicken quarters. They are $4.50 for 10 lbs!!! Last night I decided to use 4 quarters to make some chicken enchiladas. And man did they turn out great!! I made enough from just the 4 quarters to make 4 large meals. And to my math, it cost me about $0.75 per meal! (I know the one enchilada on the plate looks all jacked up, it fell apart when I was taking it out of the pan.)

I do a lot of the same. The boneless pork loin is one of the best buys on the market when it's on sale. It's been too long. I had them last night with fresh turnips and mustards from my garden, along with scratch cornbread, blackeyed peas, and chow-chow.

Most of my meat is free.... I do pay a lot for entertainment though... hunting/fishing.

Dam Bill!!!...That looks good! That's actually two meals. I'll have cornbread leftover for my Thanksgiving dressing. I just got it out of the freezer to dry for a couple of days.
