Gotta do thanksgiving at my place.

What's something that will make it good? Only option I've got is oven to cook it.

This is a 14 pound turkey that I bought Friday and put in a cooler.

I like to save all the skin I can so I'm careful about cutting the skin high on the back and thighs before removing the wings and legs.

It's pretty simple to pull the thigh all the way over the back util it pulls out.

Next I cut under the scapula or shoulder blades and pull them up, leaving the neck and backbone mostly unattached. I then simply grab the neck and pull.

This gives me a whole bone in turkey breast.

I don't stop there. I take breastbone out giving me a boneless turkey breast. This is the most difficult part because the skin adheres to the middle bone.

There you have it. I'll boil the ones to make my stock, bone out the legs for gumbo, and freeze the wings for soup or chicken salad. This was a six dollar turkey. I'll male at least 20 meals from it.

This turkey breast will be done in under an hour and a half. They come out better than a whole turkey because you don't have to wait on all the dark meat to get done and you can slice it across the grain.

I typically do a turkey like bill showed for the wife and I, however for thanksgiving at the house I like to bake a whole turkey. Rub outside down with softened butter, season with salt and pepper, maybe a little garlic powder. Bake covered until almost done and leave open for last bit 30 min to an hour to get some color on it without drying it out.

If you cook the bird stuffed it will need to cook quite a it longer than in stuffed. Use a meat thermometer to monitor doneness, you don't want to overcook it, that will dry it out more. I like to put baby carrots and 1/4'rd yellow potatoes in the pan with the turkey(depending on cooking time may add them after turkey has been cooking a while. Use drippings to make gravy.

Used to do them in the oven or on my smoker until I ordered a Waring TF200B rotisserie fryer. Uses significantly less oil than a traditional fryer and cooks an 18 lb turkey to perfection in an hour. By far my favorite way to cook a turkey.

Something to give it some flavor would be nice.

My boneless turkey breast is in the brine. The boneless dark meat is in the freezer, and the bones are in my stock pot. I never use salt in m my stock. I use chicken bullion instead. I put onion peel, carrot tops, and celery trimmings in there.

Throw it away and buy a brisket confused2

I have 3 wild turkeys in the smoker for a few hours and will finish wrapped in the oven. No idea if this will work, I've never smoked turkeys. I'm doing a fried one tomorrow for backup
