I read somewhere that adding bacon to the ground venison provides both added moisture and taste to the ground venison. Anyone experimented with this. What % bacon would you suggest. Would this mixture be reserved for hamburgers or any thing you would normally use ground for.

If you like the bacon taste, then yes it works. Ends and pieces work well.

If you like the bacon taste, then yes it works. Ends and pieces work well. Indeed they do. 15 to 25% works well. If the bacon I have is real fat I will use 15% if it is real lean 25% average bacon 20% I like to smoke the bacon real heavy before using in the bacon burger, if gotten right it will make the burgers taste like they were cooked on the grill even if cooked inside

We use pork buts, I haven't been too impressed with mixing bacon.

Do it! it worked great for us last year, 2 does, cull buck, 2 deer was about 65 lbs of ground meat, got 2 large bags of bacon or ruff cut bacon bits, fat and all. sent all that down ground first, total about 9 lbs of bacon. Adds great flavor of meat, not too strong. Hamburgers, spaghetti, meatloaf, casseroles, and even SOS was great with bacon added!....

I like adding it while cooking but not before grinding & freezing. So I'll pull my ground venison out of the freezer, mix in some bacon depending on what I'm cooking and go from there. Also keep all bacon grease for cooking as well.

I got hooked on bacon burger after having some at Wensel Lone Star Meats, when he was getting started I got to be the sampler on some of the things he was trying with Buffalo, the triple smoked buffalo bacon burger is fantastic. If you are in Hamilton pick up some.

I put in at least 10% bacon ends and pieces bought at Wal-mart to keep the burgers from being too dry and it also helps hold the patty together, after I grind and mix together I will refrigerate for at least 24 hours for the flavors to meld together. okiehuntr

Bacon ends for burger Brisket fat trim for sausage I cater some so usually have a bunch of frozen brisket trim.

the few times I used bacon, I realized I needed to use that up first and not let it sit in the freezer for months on end ... the pork seems to break down or get a less desirable flavor over time. I love the taste in just about any thing we have tried the bacon burger in out to 3-4 months, then not so much.
