So what's with all the bean hate ! I've been a chili fanatic for many years, and love good beans in it....and sometimes I like to add some hominy as well. Lots of chopped green chili in it too !

Contrary to some opinions on here, I started with this smaller sow the other day. Just kept the backstraps and rear legs, and I diced the meat all into about 1/2 inch pieces and started a pot of chili with it. I don't have a set recipe, but add whatever happens to seem appropriate at the moment.

This was the final result...WITH beans and some hominy added to it. Lots of green chili and red chili powder, along with crushed red pepper, garlic, etc...
I love the stuff just as is, in a bowl with crackers, or sometimes on a tortilla...rolled up into a burrito. Even some rice added to the burrito's is tasty.
