I went to a dinner that served quite a bit of wild game including several different pigeon dishes. I hate to admit it, but the pigeon rocked (pun intended:). My favorites were pan fried pigeon in balsamic vinegar and roasted whole pigeon. It was as good as grilled quail or grilled game hens.
I've never specifically hunted pigeons and never shot them during hunts but that's gonna change. When I think of how many feral pigeons I've passed on shooting over the years. If I'd known the darn things tasted that good I could have easily filled up my two chest freezers the first split of this dove season.
