Obviously, you dont tag an exotic but what proof do you take to a processor? How different is an axis shoulder, ham, backstrap from a whitetail?

I've never been asked for proof of specie when dropping off an axis.

Last processor I went to wanted the head for proof of species. Took him 3 black buck does.

I use Rust Game Place near New Braunsfels on 46. He has only asked me what it was. I have talked with different game wardens and even called TPWD about it over the years. A wildlife resource document will suffice is what I was told. If the game processor didn't want that I would take my business elsewhere.

Any processer worth their salt can tell an exotic from a whitetail just by looking at the meat.

Also with some out of state non-exotics, you don't get to keep the tag. NM pronghorn was one where the tag didn't accompany the animal back.

In 2014 I shot what I thought was a Mouflon Ram and took it into the processor and told them the same thing. After they caped it they sent it to my taxidermist who said (That's a dam nice RED SHEEP you have here). Also being from Arizona it was my first time seeing one on my property!

We had a few whitetail and axis skinned and hanging in the cooler, you couldn't hardly tell the difference when they were side by side. If you looked close you tell a difference in color, but it wasn't true for all of the deer, maybe their diet or how well they bled, who knows.
We have always kept the hides in the cooler or at least photos and we have had some insist on keeping a head.
Although I have never heard of anyone getting questioned one way or the other, I am sure that it has happened.

Axis meat is very easy to tell from WT. A trait of the species is that they do not store fat in muscle tissue. In other words, the meat is never marbled. Whitetail is always marbled to some extent, although it might be low.

This trait of axis is why the USDA considers - and labels - axis meat as "fat-free".
