My buddy caught a bunch of salmon in Lake Ontario a while back and he is going to give me a few filets. Looking for. Good way to cook this rather than just in the oven like usual.

Hot grill. Spray butter flavored Pam on there and don't over cook.

Sprinkle generous amount of powdered alfredo sauce on top of filets. Cover with sliced lemon. Pad of butter in top of lemon. Cook in grill in foil tent. Is that fancy enough?

I was thinking something like Salmon New Orleans. Some sort of spicy sauce over grilled salmon or something of that sort.

Keep it simple.
Hot iron skillet, little bit of oil and sprinkle the top with creole seasoning. Goes well with sauteed asparagus.

what type of salmon? heavy in oils or the more dry variety? A native from the PNW gave me a brine recipe for steelhead or silvers that works very well. You can adjust the ratio depending on how much you might be cooking.
1/2 gallon water 1/4 cup tamari soy sauce 1/2 cup sea salt 1 TBS coarse ground black pepper 1/4 cup dark brown sugar 1/4 cup regular sugar 1 heaping TBS minced garlic 1 level TBS cayenne pepper
mix all ingredients and submerge salmon (gallon ziplock bags work well) for 10-12 hours (overnight is how I do it). Smoke low temp (140*) for 2.5-3 hours. Rotate racks half way thru. Meat should flake when done.

Salmon is my least favorite of all the store bought fish. It reminds me of our local kingfish.

Put strips of fish in food processor and fine chop, add a beaten egg, seasoning you like, and some crushed Ritz crackers. Makes the best patties, have only tried with store bought fish, but fresh should really be good.

http://www.all-fish-seafood-recipes.com/index.cfm/recipe/Fried_Gar_BallsServes/Makes: 6 - 8 servings Ingredients: 2 pounds gar or alligator gar fillets, ground (if the fishmonger fillets it, get him to grind it for you, too) 1 cup scallions, chopped 1 pound boiled and peeled potatoes 2 medium white onions, chopped 1/4 cup Creole seasoning 1/4 cup all purpose flour Corn flour Cooking oil for deep frying How to cook Fried Gar Balls: Boil potatoes; peel and mush up with the other ingredients (except for the corn flour and cooking oil). Roll the mixture into balls the size of golf balls or maybe even a little bigger if you like. Put the balls in the corn flour and roll them around to fully coat the balls. In a deep fryer preheat oil to 375°F (190°C). Put the fish balls in the fryer and fry until golden in color or until they float. Serve the Fried Gar Balls as appetizers or as a side with the main meal.

Salt and pepper both sides. Skin side down on top of a tab of butter in a hot pan cook till skin is crisp and finish in oven if needed. Simple easy and good.
