I am sorry if this is in the wrong section, but I am looking for a video of deer processing (what meat group to make what cuts) I already know the skinning and most of the deboning. But I am looking at expanding my processing skills. I have the whole setup and everything to process at home and have been doing it for about 4 years. I am just needing info on stuff like what to make cutlets with etc. Thanks.

I cut steaks, I guess that is what cutlets are, out of the backstrap (loin) and the top and bottom round. Tenderloins are cut into meddalions, cooked whole. Rest of deer goes into sausage or burger.
