Does anyone have a recommendation for a deer processor in the Paris Tx/Lamar county area. Commerce area would also work.

There's one in Sulphur Springs. It's just southeast of the square but I can't remember the name. Not one in Commerce.

Detroit locker plant (Detroit TX). Not too terribly far from Paris. (903)674-6912 They also have "after hours" drop off

Try Jim's Deer Processing, I know Jim passed away a couple of years ago but his son or son in law was still running it. He runs it out of his house and has shop with a cooler and is reasonably priced. Usually accommodates drop off if you call ahead. Try this number 903-739-2398. He is located just outside of downtown.

There's a guy in redwater that is very very good but that's a bit of drive from there. Would not recommend Detroit, don't know what it is, but I've gotten processed meat from there that had a bad twang to it. Detroit is very expensive too.
