What do you guys do with the ducks you don't eat?
I'd like to have some to dehydrate for dog treats. I don't duck hunt.
I would love to try some if you have any extra. I'm in Forney, Mesquite, and Blach Springs often.
Anyone use them for dog treats?

We try to eat them all. I've been thinking about taking a bunch of breasts to a processor and having some sausage made.......
Insert duck sausage joke here
We will try and have a big cookout and make a bunch of jalapeño duck poppers. I'll pluck several as well.

I'm in Mesquite but we eat all ours. But if should get a limit of spooners I'll give you half!

Jokes about duck sausage aside, my buddy had some dried duck sausage made (I think mixed with venison) and it was delicious. I;m planning on a large portion of our ducks getting turned into that this year.

Jerky. Use Teriyaki and what you would use for venison jerky. Can't tell the difference. Bit of Tabasco helps.

I'd like to try some duck sausage or any other way anyone knows how to make it. The last time I ate duck or hunted it I was 19 and tried frying it like chicken and it was not good.... kinda greasy. Our hunting consisted of jumping tank dams.

We eat the breasts. The rest of the carcas and organs go to our dogs. No waste at all.
Key to cooking...rare to medium rare. Cook it like an expensive cut of beef. I often stuff with smoked gouda cheese and jalapeno and wrap in bacon...grill over hot flaming charcoal until bacon is crispy. .tastes like bacon wrapped filet.

The best way hands down to cook duck is:
Place it on a cedar plank breasted or plucked whole Throw the duck away and eat the cedar plank.

After season in Feb I take all my duck, geese, and any other small game I have left to Kubys to have sausage made from it. Even Mergansers get breasted and thrown into it. According to my extended family I share it with, the stuff made from the waterfowl/all game tastes better than the sausage made only from venison. I agree.

Kuby's stuff is good. Last season I found a guy who wanted all my ducks and would clean them. I can't remember eating a single duck and only cleaned a limit. Guy is the biggest proponent of duck sausage on this board...just be careful if he offers to share

I eat every duck I shoot. Put it in a gumbo and you can't tell a difference.

Judd don't don't like just any duck sausage tho, he likes big fat ones. Seriously, I did Kubys duck sausage twice. First time it was excellent, however I could not taste any duck in it, and I wonder if they threw away all my duck and just gave me pork. So the second time I did it, I told them I could not taste any duck last time, so the second time I could taste the duck, it was a lot dryer, and was really not that good. So not sure what to think. End of season if I have a lot duck in the freezer I will try it again tho. Mallards I like to eat like a streak, I breast out but leave the skin on, cook on cast iron skillet very tasty. And I try not to freeze, eat it freash, but like to age it a week or so.

I used to tease about spoonies all the time being nasty. Laying all the BS aside, if you don't like the taste of suck then you don't know how to cook duck. People will argue all day long. I no longer breast my birds, I have gone back to picking and leaving them whole. When I make a gumbo stock with the redheads, I boil them with Zatarans crab boil. After it is cool enough to pick from the bone my wife starts sneaking around and eating the meat. She is the pickiest eater on the planet. She is from SoCal and was not raised on "Grow and kill" your own. If it passes her, it is good.

I like a 50/50 pork and duck sausage. Usually do spicy German sausage. It's delicious and has a distinct flavor.
Guy grilled the best duck I have ever had. I think it was aged about 5 days. He cooked it kabob with veggies.

I hunted wtih all kinds of duck hunters from all over the us. This I can tell you Its great sport but most wont eat them. Sad but true. What a waste.

PS. Leave the sport to the hunters that eat them. That get's rid of 85% of the hunter out there. And this is true. But then again the duck stamp brings in a lot of money. Dam if you do or dam if you dont.
