The only thing that I love more than cooking, is cooking for people that I care about. Time for some Carne G, but first I must have some brisket & cheese tacos with seasoned potatoes/onions....because I'm hungry. I'm a meat & taters kinda guy most of the time. Brisket is stupid tender. Salt/pepper/smoke. food

Now, let's get started with some bacon.

Remove bacon grease, then in with yellow onions and some Falfurrias Sweet Cream Butter. When onions start to turn translucent I add the jalapenos. Once my onions & peppers are cooked down dark (not burnt) I add my garlic. Stir for a minute and spoon out.

Onions & japs are ready for the garlic stir and removal. House smells amazing. I am a fan of rich flavor. food

5 lbs of Nilgai backstrap.

Cubed, seasoned with Fiesta Brand Fajita Seasoning, ready for the flour.

Bacon's almost ready here...

Made a pot of beans that will soon become refried beans. There is no canned beans that compare to homemade. Just do it. up

Nilgai strap is browned. First time using "Gluten Free" flour. My amigo can't do gluten, this flour is weird. It acts & cooks/smells differently. Kinda scared of how it will turn out but what the heck....

In with the bacon, rotel, onions/japs/garlic.....I like bacon in my carne guisada. Just add bean & cheese at the end.

food

Gonna simmer for a while. Will add seasoning & finish off when the time comes.

Will finish off the beans, make some rice, and big handmade corn tortillas tomorrow.

To be continued.......

Thanks. All the special needs flour stuff is new to me. This stuff DOES NOT make a gravy like regular flour.

Flour was a little lumpy, weird, but overall pretty darn good. Gonna be better manyana after being re-heated on some fresh corn tortillas. food

That looks damn good. I hope you didn't put that deliciousness on a store bought tortilla.

I made homemade corn tortillas by hand, but I wasn't happy with them so I bought white corn tortillas from HEB & toasted them up. I've been making tortillas for a long time but always made flour using a rolling pin. I quit eating flour torts and just learned that thick hand made corn tortillas don't cook like thick flour tortillas (doughy inside). Gotta get a tortilla press then I'll be in business. up
