Saturday's project is gonna be to use up the rest of the freezer meat to make some homemade jerky. Living in the apartment, I wont have access to a smoker. Anyone have any good recipes and tips for making decent jerky in the oven? I dont do spicy but the lady does. So a spicy recipe and a not so spicy would be great. I saw mention of Saracha jerky the other day, that sounded pretty lights out...

Marinate it in Alegro Hickory and Cajun flavors, heavy sprinkle it with course black pepper. Hang from rack on tooth pics with cookie sheet covered in foil to catch drippings. Dry it out with oven door cracked open and set to low setting 150 or 160 if it will go that low. Made lots like that before getting dehydrator. When eating it the pepper comes off pretty easy if too hot but does leave some flavor behind.
