Never seen this method before. I'm definately going to do this from now on. I always debone before cooking. Thanks for sharing Sallysue!

I started doing them like that after seeing a video of that method for quail a couple year ago. It takes a slight bit of patience not to rip them at the beginning but it is the only way I do them now. That video showed great detail.

I do alot similar to that but without running my thumbs down the inside. Easier using my knife the same way. Do you guys pluck all the feathers or what do you do to open it up?

Interesting, will give that a try. I like leaving keel bone intact for grilling, and if you don't open up the chest cavity you cant get out the liver/heart/gizzards, they make some good eats too.

Sometimes it's hard being me! But somebody has to do it.

most of yall are too lazy, but picked whitewings have a nice layer of fat under the skin that makes a wonderful stew... plus the hearts and gizzards add some nice giblets to the gravy... take about 3-4min per bird to prepare them this way... we pick teal, too... little harder than picking a dove, but so good in the pot... yeah, I know... "we're bacon wrapping and grilling them" but there are many other ways to enjoy them

Use the finger and the thumb, flick the wrist. It's as easy as popping off that bra strap baby.

Not sure I need a sharp knife in my hand after the guns are put up, but that's a genius way to do it.
one question, I guess the game warden wouldn't have a problem with it? same as usual just no bone.

That's almost exactly how I do it. I think you even get a little more meat more easily than using a knife to de-bone.

I breast my dove but do it a bit differently. Hers is a simpler way I think.

Cook them with bone in and eat around it. I like to fry up the hearts in a little olive oil, salt and pepper. A little snack before the main course.

I might try that. I like to smoke them with the usual fillings and bacon wrapping. I save all mine for the smoker now. Near the firebox so bacon doesn't flame up or burn but you get the smoke flavor. So good. I had a buddy eat one with the bone in. He thought I cut them off the bone... I wondered why he was chewing so much. Nope!

Well if it's on the web It must be true. No I don't really need too. I've cooked it both ways and prefer it on the bone. Tenderness has nothing to do with it. I prefer to be able to Knaw on and pick the meat off the bone, much like a good tbone, pork chop or ribs. It's all part of the experience, and I've never had an issue with tenderness. Plus the shown method requires a knife and just takes too much time in my opinion. It's a great method no doubt, but I still prefer it on the bone. I can guarantee for every article on the web saying meat is better deboned there will be an equal number of articles stating the opposite. It's all what you choose to believe and really just a matter of personal opinion.
