I'll try to do a better job this time taking pics of the finished product. Cooking on an open charcoal fire tonight just before we do our deer survey after dark. Couple close friends to try this out. Tenderloin, bone in rib eyes, and T-Bones from a Nilgai shot about 3 weeks ago. Should be pretty fantastic

Turned out amazing. All was just on the rare side of medium rare. Will definitely be getting these cuts again in the future.

The Nilgai we shot their was great but the Oryx was even better, I had 3 people try the tenderloins side by side and we all liked the oryx better.
