Looks good. I will have try the butcher paper as well, I have seen some people use a brown grocery sack.

How big was that brisket? Looks like you might have used Montreal Steak Seasoning on it. Looks great!! Thanks, trimmed out around 10. I'm a s&p guy for brisket, paprika sometimes but this one was just s&p. I switched to butcher paper and will never go back to foil.
