MY DAD HAS KNIVES, FROM EARLIER IN HIS PROFESSION AS A MEAT CUTTER/BUTCHER, THEY HAVE REALLY DRIED OUT WOOD HANDLES AND SOME ARE REALLY RUSTY. ANY WAY OF REFURBISHING THE WOOD HANDLES AND GETTING RUST OFF OF THE BLADES

There are lots of videos on refurbishing steel from axe blades to knives on you tube.

the last one i did (old hickory old enough to not have "old hickory" on the handle) i scrubbed off the rust with an sos pad in the sink, took it out in the garage and straightened the blade with a brass hammer and a chunk of lead for an anvil, and lightly sanded the handle scales and finished them with birchwood casey tru oil stock finish. processed last year's deer with it too

Naval Jelly will get the rust out. Then you have to decide what, if anything, to do about the pitting. Filing can help For the handles, I would wait until the steel is rust free. Then soak them in boiled linseed oil. Then dry, light sand, and a coat of the boiled linseed oil. A light, occasional wiping with a bit of olive oil will keep them in the shape that you refurbish them to. Olive oil will not go rancid or attract bugs.

The typical go to oil, for knives in the kitchen is mineral oil, olive oil will support germ growth.

I love my Old Hickory knives. For rust, I use naval jelly. When that's finished, I use simichrome for the tarnish. The pits are there and I don't worry about them. Wash and hand dry them after each use. After I get them "cleaned up", I seldom worry about tarnish unless it gets on the cutting edge. I have found several that I have had to replace the handles.
The pits are kinda like the wrinkles on an old mans face. They don't hurt anything.
