Had the pleasure of cooking in Napa a few weeks back for a "Live Fire" event at Farmstead restaurant. Their setup is awesome, everything you could possibly want to cook on with fire. I was in charge of the ribs, 24 racks of baby backs that I finished with a ssamjang glaze, turned out fantastic, the rotisserie smoker (background of first pic behind BBQ sign) made it easy.

Yeah we went through some wood, they mostly use cherry and a little oak.

Nothing exciting, just veggies grin There's another one in the back that had sides on it that we did clams in. Fried chicken done in the big cauldron, but didn't get pics of either.

Good lord, that must have taken a LOT of oil for that cauldron. roflmao I like doing oysters on a hot plate/table like that. Just throw em' on until they start to open, nothing fancy. food Good stuff Tres, thanks for sharing.

Thanks Skinner. They probably put 10+ gallons of oil in there, thing is yuuuuge! It is a great way to cook them, been doing them on the smoker at home with herb butter too.
