Couple briskets, trimmed up. Salt/pepper/mesquite wood low & slow.



9 hrs on the pit, wrapped up and spent 9 hours in the oven, and a 6 hr rest. Cooked a little longer than I usually do but dadgum it was good. Put in fridge and sliced cold. Reheated 1 for a birthday party, and sliced/weighed/vacuum packed the other for my freezer.



Gotta have frijoles, these are my quick beans.



Did 4 racks of baby backs but forgot to take pictures of the finished product. Did two wet and 2 dry. They were a big hit though and looked great!

Did some mollejas, dang they're good. Marinated these...





Good stuff!



Did a little surf & turf. Had to pan sear some black fin tuna steaks.

It all looks friggin AWESOME man. I've been searching for good smoking wood for a year up here in Colorado and everyone wanted $400 a cord minimum for various smoking woods. Finally found a guy who is bringing me 2 cords of oak from Texas for $350 delivered. Gonna be smokin' like crazy for a while.

Thanks to Chunky Dunk I have some Nilgai....we're planning a Nilgai hunt when it cools off. Looking forward to it.



Nilgai chili with beans. I forgot the tomaters & tomato sauce but still turned out good. Whipped up some sweet jalapeno cornbread on the side, kids tore it up.
