Got an older model without the thermometer. Gonna cook indirect. Hot pile of coals, handful soaked hickory chips. cook 1 hour, take off, wrap in HD foil, add a few more briquettes, ribs back on cool side for 2 more hours


sound about right?? I don't like too much "smoke" overpowers meat to me... confused2 chef

Using the Weber,
Not sure you can call it smokin', but I rub the ribs with ample amounts of favorite rub (including salt, garlic, red pepper,etc.) and put them on direct heat after charcoal has turned ashy. I turn them every 15 minutes for about 90 minutes. Then, wrap them in foil and go ahead and take them into the house to finish in the oven at around 225 for another 90 minutes or so. Ive done a ton of them like this and they never fail to net compliments.
Hard to beat!

Sounds good. I do ribs on my Weber all the time but I quit using wet wood years ago. You'll get good color and less smoke if you use dry wood chunks.

check out barbecue pit boys on youtube...they use weber grill for smokin and grillin...good stuff!
